I think I can help you out here, at least on the main theme.
This transcription is for a two—handed version of it (I learned
this listening to a live recording of Stu Hamm), but you can adapt
it for two players if you want.

I don't know the standard conventions, so I used every two divisions 
(i.e. '——') represents an 8th note.  I figured since this song is built
mostly on 8th notes and has alot of pickups that this would work.  The 
'=' means that a note is held out, '_' means it is tied.
